Ingredients
- 2 cups chopped cooked chicken
- 1 (10 3/4 ounce) can cream of potato soup, undiluted
- 1 (10 3/4 ounce) can cream of chicken soup, undiluted
- 1 (11 ounce) can Mexican-style corn, undrained
- 1 (4 1/2 ounce) jar sliced mushrooms, undrained
- 1 (4 ounce) can chopped green chilies, undrained
- 1 1/2 cups milk
- 1 cup chicken broth
- 1/3 cup sliced green onions
- 1 1/2 cups (6 ounces) shredded Cheddar cheese
- Garnish: sliced green onions
Instructions
Combine chopped chicken, potato soup, chicken soup, corn, mushrooms, green chilies, milk, chicken broth and green onions in a Dutch oven, stirring well. Cook over medium heat 5 to 8 minutes or, until thoroughly heated. Remove from heat; add cheese, stirring until cheese melts. Garnish, if desired, and serve immediately.
