Marinade
- 1/3 cup orange juice
- 1/4 cup soy sauce
- 2 tbs vegetable oil
- 2 garlic cloves, chopped
- 2 (1/4 inch) slices of fresh ginger, chopped
- 1/2 tsp. Chinese chile sauce
- 1 lb. pork tenderloin
Glaze
- 1/2 cup orange juice
- 1/2 cup Delicious Orchards apple cider
- 2 tbs soy sauce
- 3 tbs Delicious Orchards honey
- 1 tbs butter
- 2 Fuji apples, peeled, cored and sliced
- 2 tsp brown sugar
Instructions
Whisk together marinade ingredients. Place pork in shallow pan or dish, pour on marinade and place in refrigerator for minimum of 4 hours or overnight to allow pork to thoroughly marinade. In a small saucepan, combine glaze ingredients. Bring to a boil, reduce to a simmer and cook 10 minutes. Preheat oven to 425 degrees. Transfer marinated pork to a roasting pan, discard marinade. Bake for 45 minutes, brushing with glaze about 4 times. Cool slightly. Just before serving, melt butter in a small skillet over medium-high heat. Sauté apples with brown sugar until edges are brown, 5 to 10 minutes. To serve, thinly slice the pork. Arrange on four serving plates, alongside browned apples. Top each with a few spoonfuls of glaze. Serve with remaining glaze in bowl.
