- 2 lbs. ground beef
- 2 tbsp. olive oil
- 1 cup yellow onion, chopped
- 2 tbsp. Worcestershire sauce
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 2 tsp. salt
- 1 tsp. black pepper
- 1/2 cup ketchup
- 1 tbsp. fresh parsley, chopped
- 1 cup plain bread crumbs
- 2 extra large eggs, beaten
Preheat the oven to 350 degrees.
Heat the olive oil in a medium sauté pan. Add the onions, salt, and pepper and cook over medium-low heat, stirring occasionally. Continue cooking for 8 to 10 minutes until the onions are translucent but not brown.
In a large bowl, combine the ground beef, onion mixture, bread crumbs, eggs, Worcestershire sauce, garlic powder, onion powder, ketchup, and parsley. Mix all of the ingredients lightly with a fork. Don’t mash the mixture or the meatloaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Bake for 1 hour until the internal temperature is 160 degrees and the meatloaf is cooked through.
