- 4 cups coleslaw mix
- 4 cups broccoli slaw
- 1 cup matchstick carrots
- 1 bunch green onions, chopped
- 1 red bell pepper, chopped
- 1/2 cup cilantro, chopped
- 1 cucumber, seeded & chopped
- 1 cup chopped peanuts
Thai Peanut Sauce Ingredients:
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tbsp. mayonnaise
- 1 tbsp. sesame oil
- 1 tbsp. Sriracha
- 1 tsp. garlic, chopped
- 1/2 tsp. rice wine vinegar
- Juice of 1 lime
Toss the coleslaw mix, broccoli slaw, carrots, green onions, red bell peppers, cilantro, and cucumbers in a large bowl. In a separate large bowl, combine all the Thai peanut sauce ingredients. Mix these ingredients together thoroughly. Now toss the vegetable mixture in the first bowl with the sauce until everything is well coated. Top with the chopped peanuts then serve and enjoy!
