Ingredients:
- 6 eggs, hard boiled
- 1 1/2 lb bulk (ground) pork sausage
- 2 eggs (for dredge)
- 1/2 cup panko bread crumbs
- 1 Tbsp dried parsley
- 1 tsp black pepper
- cooking spray
For Sauce
- 1/2 cup mayo
- 3 Tbsp dijon mustard
- juice of 1 lemon
- 1/2 tsp cayenne pepper
Directions
- Hard boil six eggs, remove eggs from water using a slotted spoon and place in a bowl of ice water to cool. Once cooled, peel eggs and set aside.
- Place flour in one bowl, beat 2 eggs in a second bowl, and in a third bowl mix? bread crumbs, parsley and pepper.
- Divide sausage into equal sections for each egg. Flatten or roll sausage around each egg so that the egg is completely covered.
- Take each egg, roll in flour to coat and dip into the beaten eggs to cover. Place in breadcrumb mix and roll until coated with breadcrumbs.
- Preheat air fryer to 400 degrees.? Place eggs in air fryer basket in a single layer. Spray basket (if not use parchment basket liner) and eggs with non stick cooking spray.
- Air fryer eggs for 15-18 minutes, turning eggs halfway through, until sausage layer is cooked and coating is golden brown. While eggs are cooking, prepare sauce by whisking mayo, mustard, lemon juice, and cayenne pepper. Serve scotch eggs with the mustard sauce.
