Seafood Kabobs

Ingredients

  • 3 lbs firm fleshed fish cut into 1” cubes
  • 1 lb large shrimp (16/20 count), cleaned & deveined
  • 1 fennel bulb, cut into 1” squares
  • 1 large red onion, cut into 1” squares
  • 1lb cherry tomatoes
  • 1lb medium mushroom
  • ¼ cup honey
  • ½ cup oil
  • ½ cup packed cilantro, chopped
  • 1 Tbsp garlic
  • Juice & zest from 1 lime
  • Salt & pepper to taste

Instructions

  1. Soak wood skewers in water for 1 hour.
  2. To make the marinade combine honey, oil, cilantro, garlic, lime juice & zest. Stir to mix.
  3. Add fish to marinade & refrigerate for 1 hour.
  4. Heat an oiled grill to med/high heat.
  5. Place seafood on 2 skewers, alternating with vegetables.
  6. Cook for 5 minutes per side, rotating skewers to cook fish thoroughly.
