Berry Peachy Summer Salad

Ingredients

  • 1 Kiwi- peeled & cut into slices
  • 10 Peaches or Nectarines, sliced or diced
  • 2 containers of strawberries, halved or sliced
  • 1 blackberries – container
  • 1 blueberries – container
  • Juice of 2 large oranges
  • 2 Tbsp. fresh mint, finely minced
  • 3 fresh limes, juiced
  • ¼ cup agave

Instructions

  1. Add peaches, strawberries, blackberries, blueberries, and kiwi to a large bowl. Sprinkle with fresh mint.
  2. In a small bowl, whisk together orange juice, lime juice and agave until smooth and dissolved.
  3. Drizzle the dressing over the fruit salad. Gently stir (so you don’t crush the peaches).
  4. Enjoy right away or store in an airtight container in the fridge 1-2 days. The fruit is delicate and will start to soften right away, so we recommend eating this within 1-2 hours of making, for best results.
