Soft Shell Crab Sandwich

Ingredients

  • 2 softshell crabs (jumbo or whale size)
  • 1 cup all purpose flour
  • ¼ cup old bay seasoning
  • 2 cups panko breadcrumbs
  • 2 eggs for egg wash
  • Oil for fryer

Instructions

  1. Have fishmonger clean crabs for you. Combine flour & old bay seasoning in a deep baking dish.
  2. Mix eggs and a little bit of water in a bowl. Put panko breading in another baking dish.
  3. Heat oil in a deep-frying pan – 350°. Enough oil to cover crabs.
  4. Dredge crabs in flour-old bay mix. Make sure to cover well. Dip in egg wash, again cover well. Then cover in panko breading carefully. Place breaded crabs in hot oil fry aprox. 6-8 minutes till golden brown, turn once during frying.  Drain on paper towel.
  5. Place on bread of your choice with tomato, lettuce, onion, and tartar sauce.
  6. Garnish with fries & coleslaw.
