Crab Stuffed Salmon & Grilled Shrimp

Ingredients

Salmon

  • 2 salmon fillets 6-7oz
  • 12 oz lump crab meat
  • 3 scallions- chopped
  • 1/3 cup sweet onion- diced
  • 1/2 cup fresh dill- chopped fine
  • 4 oz cream cheese
  • 1/3 cup mayo
  • 2 teaspoon old bay
  • Paprika (to taste)

Shrimp

  • ½ lb. large shrimp- cleaned
  • Salt & pepper to taste

Instructions

  1. Set oven to 350° F
  2. Slice salmon lengthwise. Start ½” at top to ½” at bottom, trying not to cut through bottom of fillet.
  3. In a bowl, mix together crab meat, sweet onion, dill, cream cheese, mayo, and old bay seasoning. Take a good handful of stuffing and place inside salmon fillets, mold to the top of the fish.
  4. Dust with paprika and place on baking pan in oven for 12-14 minutes.
  5. Put shrimp on skewers. Grill 2-3 minutes on each side.
