- 2 TBS butter
- 1 1/2 lb. large sausage links (Use savory or spicy, but not sweet, sausages to contrast with the apples in this dish.)
- 1 onion, thinly sliced
- 3 Granny Smith apples, peeled, cored and cut in thick wedges
- Juice of half lemon
- 2 TBS brown sugar
- 1/4 tsp. cinnamon
- Dash nutmeg and cloves
- Salt and freshly ground black pepper
Melt butter in a large skillet over medium-high heat. Add sausages and cook, turning frequently, until brown. Remove and drain on paper towels. Add onion to pan. Saute in drippings, stirring frequently, until soft, about 5 minutes. Add apples and cook about 3 minutes longer or until apples are tender-crisp and onions golden. Stir in lemon juice, brown sugar, cinnamon, nutmeg and cloves. Return sausages to skillet and toss to combine. Cover and cook over low heat 15 to 20 minutes, until sausages are cooked through and apples are soft. Season to taste.
