- 1 tsp. paprika
- 1/2 tsp. oregano
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- 1/4 tsp. cumin
- 1/4 tsp. salt
- 1/8 tsp. Cayenne pepper
- 1/2 tsp. onion powder
- 1 TBS fresh parsley, chopped
- 1 TBS fresh cilantro, chopped
- 2 TBS extra-virgin olive oil, divided
- 2 Cod fillets
- 2 TBS of butter
- Juice of 2 fresh limes
Place all of the spices and herbs in a small bowl and toss to combine. Brush the cod fillets with 1 tablespoon of olive oil; then, rub the fillets with the spice mixture. Coat them well using all of the mixture. Marinate the fillets in the refrigerator for at least 30 minutes or overnight.
Preheat the oven to 450 degrees. Place the cod fillets on a foil-lined baking sheet. Roast for about 10 to 12 minutes or until internal temperature reaches 145 degrees.
While the fillets are in the oven, in a small saucepan, melt the butter with the remaining tablespoon of olive oil and lime juice.
Plate the cod and top with lime butter. Serve and enjoy!
