- 1 TBS olive oil
- 1 lb. ground beef
- 1/2 medium onion, chopped
- 1 clove of garlic, minced
- 1 jalapeno pepper, diced
- 2 TBS chili powder
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1 (15 oz.) can red kidney beans, drained and rinsed
- 1 (15 oz.) can black beans, drained and rinsed
- 1/2 cup of corn, fresh, canned or frozen
- 1 (14.5 oz.) can diced tomatoes
- 1 (14.5 oz.) can of tomato sauce
- Salt & pepper to taste
In a large pan, heat oil over medium to high heat.
Add the beef and onion and cook until the beef is browned, breaking it up into crumbled pieces.
Add garlic, jalapeno and spices, stirring well to combine.
Stir in the beans, corn and tomatoes until well blended.
Bring to a boil and reduce to a simmer. Cover and cook for 8 to 10 minutes.
Remove from heat and serve.
