Ingredients
Salmon
- 2 salmon fillets 6-7oz
- 12 oz lump crab meat
- 3 scallions- chopped
- 1/3 cup sweet onion- diced
- 1/2 cup fresh dill- chopped fine
- 4 oz cream cheese
- 1/3 cup mayo
- 2 teaspoon old bay
- Paprika (to taste)
Shrimp
- ½ lb. large shrimp- cleaned
- Salt & pepper to taste
Instructions
- Set oven to 350° F
- Slice salmon lengthwise. Start ½” at top to ½” at bottom, trying not to cut through bottom of fillet.
- In a bowl, mix together crab meat, sweet onion, dill, cream cheese, mayo, and old bay seasoning. Take a good handful of stuffing and place inside salmon fillets, mold to the top of the fish.
- Dust with paprika and place on baking pan in oven for 12-14 minutes.
- Put shrimp on skewers. Grill 2-3 minutes on each side.
