For the dressing:
- 2/3 cup Earth & Vine Apricot Chili Jam
- 1/4 cup rice wine vinegar
- 1/4 cup extra-virgin olive oil
- 1/3 cup Delicious Orchards Apple Cider
- 1 TBS cilantro, chopped
- 1/4 tsp. Kosher salt
- 1/8 tsp. Cayenne Pepper
In a small bowl, whisk all ingredients together and set aside.
For the salad:
- 2 Papaya, skinned and seeded, medium dice
- 2 English cucumbers, peeled and seeded, medium dice
- 1 small red onion, julienned
- 1/2 cup blueberries
Place ingredients in a large bowl and toss with the dressing until completely coated.
