Ingredients
Tzatziki Sauce
- 1/2 cup finely grated cucumber
- 1 cup thick whole milk Greek yogurt
- 1 tablespoon lemon juice
- 1/2 tablespoon extra-virgin olive oil
- 1 garlic clove, grated
- 1/4 teaspoon sea salt
- 1 tablespoon chopped dill
- 1 tablespoon chopped mint, optional
Grilled Fennel
- 1 bulb fennel, frond and stems removed
- 1 Tbsp Olive Oil
- Salt & Pepper to taste
Lamb Chops
- 4 4-ounce Lamb Chops
- Olive oil
- Salt & pepper to taste
Instructions
Tzatziki
- Place the cucumber on a towel and gently squeeze out a bit of the excess water.
- In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.
Grilled Fennel
- Cut fennel in half, remove bottom and core. Cut into ½ inch slices.
- Toss in olive oil & season with salt and pepper
- Grill until soft & the edges are slightly charred
Lamb Chops
- Heat grill to med-high and lightly oil grates.
- Season lamb chops with salt & pepper to taste. Grill for 3-4 minutes per side until internal temperature reads 145°.
