Ingredients
Shrimp
- 1 lb. Shrimp, peeled and deveined
- 1 Tbsp chopped Parsley
- 1 Tbsp Lemon Zest
- 3 Tbsp Olive Oil
- 1/2 tsp salt
Salad
- 2 Romaine hearts, chopped
- 2 Bell Peppers (any color), diced
- 1 Hothouse Cucumber, diced
- 1 cup chopped Grape Tomatoes
Vinaigrette
- 1 Tbsp Dijon Mustard
- 2 Tbsp White Wine Vinegar
- 2 Tbsp Honey
- 1/3 cup Olive Oil
Instructions
- Combine parsley, 3 Tbsp. olive oil, lemon zest and salt in a bowl, add shrimp and marinate for 30 minutes or more.
- Whisk together Dijon mustard, white wine vinegar, honey and 1/3 cup olive oil. Set dressing aside.
- Mix romaine, bell peppers, cucumber and tomatoes together in a salad bowl. Add dressing and toss.
- Grill shrimp approximately 2-3 minutes per side. Add to salad and toss lightly.
