Ingredients
- 2 portions of salmon fillets
- 2 tsp extra virgin olive oil
- 1 tbsp honey
- 1 tbsp Dijon Mustard
- 2 tsps fresh ginger, finely minced
Directions
- Preheat oven to 425 degrees. In a small bowl, blend olive oil, honey, Dijon Mustard, and ginger.
- Spray a baking dish with olive oil cooking spray and place the salmon in the dish. Brush the salmon fillets evenly with olive oil mixture. Bake 12 to 14 minutes, until fish flakes easily with a fork. For the best results, coat salmon with half of the mixture, bake in oven for 6 1/2 minutes and then remove the salmon from the oven and coat with the remaining mixture. Place bake in the oven for another 6 1/2 minutes. The mixture remains on the salmon better this way.
- Serve salmon on a bed of mashed potatoes and roasted vegetables.
