Dry Ingredients:
- 1 cup all-purpose flour
- 3 tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
Wet Ingredients:
- 1 cup buttermilk
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
- 3 tbsp. butter, melted
- 2 eggs
- 1 1/2 tsp. vanilla extract
- 1/4 cup poppy seeds
Whisk together all the dry ingredients in one bowl. In a separate bowl, blend all the wet ingredients together. Fold the poppy seeds into your blended wet ingredients. Add the wet ingredients to the dry ingredients and mix just until combined. Do not overmix the batter. Lumps in the batter are fine. Cook on a lightly greased griddle until each pancake is lightly golden on both sides. Serve hot with maple syrup and enjoy!
