Ingredients
- 3/4 cup Kalamata Olives
- 2 Tbsp. diced Roasted Red Peppers
- 1 Tbsp. minced shallot
- 1 1/2 tsp capers
- 1 clove garlic minced
- 1 Tbsp. Red Wine Vinegar
- 1 tsp oregano
- 2 fresh basil leaves
- 1/3 cup olive oil
- 1 baguette sliced 1/4 inch pieces
- 1 garlic clove halved
- 2 Tbsp. finely diced feta cheese
Instructions?
- In food processor, add first 9 ingredients – give a few pulses until olives are finely chopped but still chunky.
- Toast the baguette slices in the oven, rub each piece of bread with the halved garlic clove and top with 1 Tbsp of bruschetta. Garnish with feta cheese and half a green olive.
