Ingredients
- 2 ripe peaches, pitted and chopped (you may use any yellow/orange fruit such as, mangoes, pineapple, papaya)
- 1 small red bell pepper, cored, seeded and sliced
- 1 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 clove garlic, minced
- 1/4 cup pineapple juice
- 6 TBS fresh lime juice (about 3 medium limes)
- 1 jalapeno pepper, minced
- Salt and freshly ground black pepper to taste
Instructions
In a medium bowl, mix all ingredients, including salt and pepper to taste. Cover and refrigerate at least 2 hours before serving.
