Ingredients
- 3 lbs firm fleshed fish cut into 1” cubes
- 1 lb large shrimp (16/20 count), cleaned & deveined
- 1 fennel bulb, cut into 1” squares
- 1 large red onion, cut into 1” squares
- 1lb cherry tomatoes
- 1lb medium mushroom
- ¼ cup honey
- ½ cup oil
- ½ cup packed cilantro, chopped
- 1 Tbsp garlic
- Juice & zest from 1 lime
- Salt & pepper to taste
Instructions
- Soak wood skewers in water for 1 hour.
- To make the marinade combine honey, oil, cilantro, garlic, lime juice & zest. Stir to mix.
- Add fish to marinade & refrigerate for 1 hour.
- Heat an oiled grill to med/high heat.
- Place seafood on 2 skewers, alternating with vegetables.
- Cook for 5 minutes per side, rotating skewers to cook fish thoroughly.
