- 4 Cups Baby Spinach
- 2 Large Peaches, sliced
- 1 Avocado, diced
- 1/2 small red onion, sliced thin
- 1/2 cup goat cheese crumbles
Dressing
- 2 Tablespoons balsamic vinegar
- 4 Tablespoons extra virgin olive oil
- 1 Clove garlic, minced
- 1/2 teaspoon Dijon mustard
- Salt and Pepper to taste
In a medium bowl, whisk together balsamic vinegar, olive oil, minced garlic, Dijon, and salt and pepper
Place spinach into equal portions on plates, top with peach slices, avocado, red onion and goat cheese. Drizzle remaining dressing over the top of the salad.
