Spinach Mashed Potatoes

Ingredients

  • 3 lbs of potatoes
  • 1/2 cup butter (1 stick)
  • 1/4 cup shallots, minced
  • 4 packed cups of spinach, roughly chopped
  • 1/4 cup sour cream
  • 1/2 – 1 cups half and half
  • salt and pepper

Instructions

  1. Peel and roughly dice potatoes.
  2. Cover with water in a large pot and bring to a boil over medium heat.
  3. Boil until tender.
  4. While the potatoes are boiling, melt butter in a heavy skillet.
  5. Dice shallots and add to melted butter.
  6. Sauté until shallots are soft.
  7. Add spinach and sauté, stirring, until spinach has wilted.
  8. Remove from heat.
  9. Once potatoes are done cooking, drain and mash, sprinkling generously with salt and pepper.
  10. Mix in sour cream and half and half until desired consistency.
  11. Add in butter, shallots, and spinach mixture and stir until well combined.
  12. Serve hot.
