Ingredients
- 3 lbs of potatoes
- 1/2 cup butter (1 stick)
- 1/4 cup shallots, minced
- 4 packed cups of spinach, roughly chopped
- 1/4 cup sour cream
- 1/2 – 1 cups half and half
- salt and pepper
Instructions
- Peel and roughly dice potatoes.
- Cover with water in a large pot and bring to a boil over medium heat.
- Boil until tender.
- While the potatoes are boiling, melt butter in a heavy skillet.
- Dice shallots and add to melted butter.
- Sauté until shallots are soft.
- Add spinach and sauté, stirring, until spinach has wilted.
- Remove from heat.
- Once potatoes are done cooking, drain and mash, sprinkling generously with salt and pepper.
- Mix in sour cream and half and half until desired consistency.
- Add in butter, shallots, and spinach mixture and stir until well combined.
- Serve hot.
