Sweet Potato & Apple Soup

Ingredients

  • 5 lbs sweet potato peeled and cubed
  • 4 apple any variety (recommend gala)
  • 1 Tbsp olive oil
  • 1 shallot (1 large or 2 small) chopped
  • 1 tsp chopped garlic
  • 1/4 tsp cayenne
  • 1/4 teaspoon cinnamon
  • 8 cups vegetable broth
  • 1 cup D.O. Apple Cider
  • Fresh pepper (optional)
  • 1 bay leaf
  • 2 sprigs fresh thyme
  • 1 tsp salt

Instructions

  1. Heat olive oil in a medium size soup pan. Add shallots and sauté until translucent.
  2. Add the sweet potatoes, apples and a good pinch of salt. Sauté for about 3 minutes.
  3. Add in just enough broth to cover the vegetables. Simmer until sweet potatoes and apples are soft and tender
  4. Remove thyme sprigs and bay leaf and discard. Carefully blend the soup until smooth, using an immersion blender, or allow to cool then transfer to a blender to puree. Add a little more broth if the soup is too thick for your liking, then stir to combine.
  5. Stir in spices, adjust seasoning and serve.
