- 3 large sweet potatoes, washed
- 3 TBS , plus 1 tsp. homemade taco seasoning
- Olive oil
- Salt and pepper
- 1 lb. lean ground turkey, chicken or beef
- 1 (15 oz.) can black beans, drained and rinsed
- taco toppings of your choice
FOR THE TACO SEASONING:
- 1 TBS chili powder
- 2 tsp. onion powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1 tsp. paprika
- 1 tsp. oregano
- 1/2 tsp. salt
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper and set aside.
Cut the sweet potatoes in half. Rub them with olive oil. Season with 1 teaspoon taco seasoning, salt and pepper. Bake for 50 minutes or until the potatoes are tender.
When potatoes are almost cooked, heat a skillet over medium heat. Add a little olive oil or cooking spray. Add the ground meat, breaking it up as it cooks. Add the taco seasoning.
When the meat is almost cooked through, stir in the beans to warm.
When the potatoes are done, gently mash the center of the potatoes. Then, spoon the taco filling into them, top with your favorite taco toppings and enjoy.
