Vegetable Frittata

Ingredients

  • 2 tsp olive oil
  • 1 medium red onion, diced
  • 1 red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 cups baby spinach
  • 3 large eggs
  • 6 large egg whites
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • ¼ cup shredded cheddar cheese
  • Cherry tomatoes, sliced

Instructions

  1. Preheat oven to 360°. Heat oil in a 10” skillet over medium high heat and add onions and bell peppers. Sauté for about 5 minutes until pepper and onion are tender. Add zucchini and sauté until tender, about 5 minutes. Add spinach and stir until wilted.
  2. Whisk eggs, egg whites, salt and pepper together in a medium bowl. Pour egg mix into skillet and stir to combine. Remove skillet from stove and bake for 5 to 10 minutes, until eggs are set and remove off heat.
  3. Sprinkle cheddar cheese on top and return to oven for 1 minute to melt. Remove from skillet and top with sliced cherry tomato slices.
