Zucchini and Summer Squash Tomato Bake

Ingredients

  • 1 1/2 lb. zucchini (about 3 medium), chopped
  • 1 1/2 summer squash
  • 2 pt. cherry tomatoes, halved
  • 1 Tbsp garlic, minced
  • 2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 3/4 tsp salt
  • 1/3 c. freshly grated Parmesan
  • 2 Tbsp basil chopped fine, for garnish

Directions

  1. Preheat oven to 350°.
  2. In a large bowl, combine zucchini, tomatoes, garlic, olive oil, Italian seasoning and salt. Toss to coat.
  3. Transfer vegetables to a small baking dish, then sprinkle with Parmesan. Bake until golden, 30 to 35 minutes.
  4. Top with basil and serve.
