Ingredients
- 1 1/2 lb. zucchini (about 3 medium), chopped
- 1 1/2 summer squash
- 2 pt. cherry tomatoes, halved
- 1 Tbsp garlic, minced
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- 3/4 tsp salt
- 1/3 c. freshly grated Parmesan
- 2 Tbsp basil chopped fine, for garnish
Directions
- Preheat oven to 350°.
- In a large bowl, combine zucchini, tomatoes, garlic, olive oil, Italian seasoning and salt. Toss to coat.
- Transfer vegetables to a small baking dish, then sprinkle with Parmesan. Bake until golden, 30 to 35 minutes.
- Top with basil and serve.
